Sliced pear & or apple - very thinly sliced scallions or red onion (be judiciously sparse though so the onion flavor doesn't dominate) - a bit of either crumbled goat cheese or blue cheese & dashes of the dressing on top. It's such a wonderful fall salad - and with a cup of some hearty hot soup makes a well rounded dinner for a might when you want to eat lighter.
Ken's lite ceasar is also the bomb doggity. You don't even need to add the extra parm cheese - just get the romaine lettuce - the dressing - some croutons (optional - but I really miss them on a ceasar if I don't have a few) - toss it and finish with fresh cracked pepper to taste (I like a LOT).
