Are you actually in Cairns? Or are you staying somewhere nearby, like Port Douglas?

Either way, be careful of bluebottles - these are jellyfish with an incredibly painful sting. Most resort beaches will have a netted-off area for swimming.
The seafood is probably even better there. Make sure you have barramundi, which is a white fish with a soft, buttery flesh. Grilled, with the skin on.
If you're spending that long in Cairns, getting out to the Daintree and Cape Tribulation. Tropical forest, mangroves, etc.
Also, a pub that has cane toad races makes for a fun night out.
If you're going to Uluru (it's not Ayers Rock any more), are you also going to King's Canyon? It's wonderful, but it's also six hours drive away. And prepare for some early mornings - it gets too hot to see anything by the middle of the day.
