we have a local place (linked) that does really great balsamic flavors - and a co-worker has taken to adding them to her drinking water - YES - the

vinegar does give a "bite" to it - but I've tried it with some of the fruit flavored ones and it's not bad really.

I like using them to make salad dressings - over greens with goat cheese and veggies - it's really yummy.

Our local store does some cooking demos every once in a while too that give you great ideas - their website has some recipe pages too that you might want to check out Kelly for inspiration :)
