I cook chicken with balsamic - or use it in marinades. Salmon would taste great with the maple balsamic I bought over the weekend as a base.

I like cooking veggies with it as well. I have a lot of fruity balsamics (pineapple, apricot, etc) and that goes well with peppers and onions.
