lately some of my favorite pizza has been the one's baked in those super hot ovens - super short cooking time - the crust gets almost burnt cooked?

I think for the most part it's wood fired pizza ovens? I just like the flavor it imparts and how the crust is really baked HOT - the cheese is super bubbly.
I'm not sure I've ever had a deep dish pizza cooked in one of those types of ovens though.
