mine are cotton (allegedly Egyptian, not that that means anything). I have some kind of dense latex foam pillows, they're amazing.

linen is lovely , but spendy. generally i like a really nice soft cotton. and, feel them. If they are stiff before you buy them, you don't want them -- nm
