it's funny - I tried making it off some recipes on the net - and when they sent me their recipe - as expected - some of the difference is ingredients

sure ... but their preparation is totally 100% in the oven - nothing done on the stove top at all ... start to finish - it's made in the oven
a long process ... and that explained to me why theirs has such a greater depth of flavor ... so much richer than what I had come up with ... and surprisingly when I ate it I thought it was made with tenderloin because of how deliciously soft and easy to cut it was ... literally falling apart once your pierced the crustish sort of exterior carmelization of the beef ... but they used choice beef chuck. who knew?
