after my last trip to Covington, I signed up for Jungle Jim's emails ... they have some great tips - AND their website has some good recipes from their cooking school (wish I lived closer - I would totally attend some of those) ... anyway - here's their cheese suggestions - for anyone needing inspiration :)
Don’t Be a Victim of Cheesepocalypse
It’s been called the Cheesepocalypse, aka the great Velveeta shortage of 2014. Oh no what are we going to use to give our queso dips, grilled cheeses and macaroni and cheese that gooey creaminess?
Luckily Jungle Jim’s has you covered. There are many different options for all of your favorite cheesy recipes to replace Velveeta.
Queso Chihuahua is a Mexican cheese that is used in quesadillas, chili con queso and many other Mexican dishes. It is a creamy, mild cheese that is perfect for melting.
Provel – St. Louis wouldn’t be the same if it weren’t for their famous Provel cheese. It’s a combination of cheddar, swiss and provolone. It has a gooey and buttery texture and is a great topping for a famous St. Louis pizza.
Butterkase – Germany may be most well known for their limburger cheese, but Butterkase is also a very popular import from Germany. When translated, Butterkase means butter cheese, yet it contains no butter. It is very mild due to its short aging process. I love Butterkase in a grilled cheese or paired with black forest ham on dark rye. It’s fantastic!
Havarti – Denmark’s most popular cheese is Havarti. It’s a semi-soft cow’s milk cheese. Havarti may look and taste creamy and mild as you first eat it, but you soon taste a sweet and powerful flavor. Havarti is a great substitute for Velveeta in macaroni and cheese. I like to add some fresh dill weed to my Havarti macaroni and cheese as it gives a little extra flavor.
Troyer Habanero Jalapeño Cheddar - This spicy, creamy cheese is the same texture as Velveeta but adds an extra spice with jalapeño and habanero peppers. This cheese is perfect for queso dip or nachos. It melts very easily, but be prepared – this is one of the spiciest cheeses we have in our cheese shop!
There is no need to freak out over the Cheesepocalypse. There are other options for all of your favorite cheese dishes that will make you never miss Velveeta again!
