Fruit is a no/no - if you have to have fruit - eat the low carb ones - pears and I think Strawberries -- nm

I'm hoping that using the fresh spinach rather than the frozen won't make too much of a difference.

let me know if the fresh works or not - if not next time you can saute it up a bit in a pan prior to adding it.

Oh yeah, that might be it. I can't see it falling apart anyway - I mean, a burger doesn't fall apart.
