Hub and spoke system. Jetblue once offered me (rather cheaply I add) Denver to San Fran via New York.

Virgin America is currently offering me (no cheaply) NYC to Austin via San Fran.
For Knoxville to Orlando, unless you wind up on someone like Allegiant or Spirit who might run an non-stop, the airlines are going to send you to a hub. Hopefully a logical one, but you never know. You probably have options for hubs such as:
US Airways - Charlotte or Washington DC
United - Washington Dulles
American - Miami
Delta - Atlanta
If you're extra lucky, you might get an offer to change planes in Chicago or Dallas
