The ships in the north-west and south-east parts of the map, I was simply able to go toe-to-toe, side-by-side and take them down.
The north-east one is actually 2 ships that attempt to fight in tandem against you and is a tricky battle. I had to spread my damage around as equally as possible, because if you sink one of the ships, the other one sets itself on fire and rams the hell out of you. So if they are both on the verge of being sunk, you should be able to take out the 2nd one before you get fire rammed.
The south-west one is heavily armoured and is only really vulnerable from the rear, so you need to sail accordingly to get set up for that.
