i'm reading an interview with aaron franklin (the pitmaster) in lucky peach, and the guy is such an obsessive that his barbecue must be as fantastic as everyone says it is. he talks about building the fires differently in his three smokers depending on the outside temp and because of the way the wind hits each one of them. then he talks about how he selects each log he puts on the coals depending on exactly what he needs in denseness and potential sugar content and the particular shape of EACH DAMN LOG. i want to eat there so bad.
