The chefs are bad because they are cast that way. Like the problems with the Survivor casting.

HK is cast more towards drama than good chefs. The casting episodes of Masterchef gets rid of that.
I haven't watched Kitchen Nightmares in a while. I always preferred the UK version. I think too many of the US ones are just people that want to be on TV. Plus, the Fox editing/production of Nightmares annoys me.
