steamed rice and chopped veggies, cuban rice/beans (test kitchen has great vegab recipe for slow cooker)

When I was vegan we'd eat baked potatoes with a whole bulb of baked garlic smashed like butter into it.

thin slice veggies like zuk, peppers, broc/cauli coat with eevo and grill, drizzle a bit of balsamic, salt

chop the above with some onions, some pre- cooked potatoes (MICROWAVE) bake@400-450 20-30 min on a rimmed baking . Sheet ..oh toss with oil, sprinkle some herbs, salt

roughly chop some veggies and make soup, blender into goo, we use a hand wand and goop it right in the pot. Kale potato white bean, oo...Ramsey boils broc and blenders it with a bit of the cooking water, brocco soup, salt of course
