On my VW there's a valve that goes bad that regulates the pressure of the A/C system and I just had it replaced.

My guess is that you've got a bad compressor or pressure valve and they don't want to replace it. They should be able to see the pressure from the computer when it's idling and see if that is in acceptable range.
