two controllers are a must. Rock Band 2 and GH:WT are both very popular, as well, especially if you have lots of company over.
IMO, don't bother with the over-the-ear wireless headset, the standard wired one is fine. I have the expensive wireless addon, but if your unit will be close enough to the router to use a cable, that might work faster.
I also have the play-and-charge kit for my wireless controller. And I have the remote control that MS makes; it works great for watching movies and stuff.
