on cooking competition shows, I think private chefs are behind the eight ball in that they mainly make a fancy meal for one family - restaurant chefs

make a multitude of meals all day long. It gives them a speed/time management edge.

restaurant chefs do a lot of par/pre cooking, chicken breasts are half baked so when one is ordered they can saute' it in a few minutes -- nm
