In the current Big 12, all 10 teams play each other during the season (9 matchups for each team)

So there's really no need for a championship game.
In the old Big 12, there were two divisions:
North: Kansas, Kansas St, Nebraska, Missouri, Colorado, Nebraska
South: A&M, Texas, Texas Tech, Baylor, Oklahoma, Ok. State
Each team had 7 conference games: They played the 5 other members of their division every year, plus two teams from the other divisions (the two teams from the other division rotated every two years)
So there was a real chance you were playing in the championship game against someone you didn't play at all during the regular season.
