OTOH, with dessert comes an order for a drink, cognac or scotch, even a couple espressos you have a profitable add on

but you can often tell, the waiter comes by with the bill in hand and asks , 'can I interest you in some dessert' which has the effect of a dept store clerk asking may I help you
