A "gentlemen's club" for gay men. It would be an above-average, but non-pretentious lounge with excellent cocktails and appetizers. Prices would be a bit higher than average, but reasonable enough for anyone to afford a special night out.
I'd set it up like the old Secrets used to be out in the Navy Yards, but with better decor, food, and drinks. I'd look to partner with someone to split an old warehouse space to mimic what Secrets and Ziegfield's used to be in DC.
My other idea would be a casual restaurant called Saint Edward. It would feature all the usual Midwestern comfort food. Kind of like The Publican in Chicago, but with an entirely different menu. And the only salad dressing offered would be Dorothy Lynch.
