Exactly how full of shit is Melisandre?

On the one hand, that Renly killing smoke baby seems to suggest she has real power of some kind and isn't 100% sham.

On the other hand...Winterfell.

Maybe she's just the world's shittiest interpreter of flame messages from the Lord of Light?
