In response to "so last night I cooked up some southwestern chicken casserole" by tRuMaN

I made something similar - tapados de pollo.

Slice an onion, a large tomato, an apple and a pear. Place a layer of each at the bottom of a casserole dish. Place 2 chicken legs, lightly salted and divided into thighs and drumsticks on top. Place another layer of onion, tomato, apple and pear on top. Mix sherry, red wine vinegar, garlic, sugar, cinnamon, cloves and oregano and pour on top. Cover casserole dish, cook for one hour in oven at 190C (375F), remove lid, cook a further 30 minutes. Serve.
