If I can use a name or phrase to order something and they know what it is despite it not being on the menu board, that's a secret menu.

for example, if I said "I'd like a McGangbang" and the cashier knows what that is, that's a secret menu. If I have to say "so I'd like a McDouble and a McChicken, but put the McChicken between the burger patties in the McDouble," that's a weird special request.
