At retail, eggs cost about a quarter apiece, bacon $8 a pound, bread and fruit, etc. are within reach of a household budget. "Bottomless mimosas" -- OJ and cheap champagne -- none of that adds up to $40 a person, let alone twice that. And what if a diner doesn't want alcohol with breakfast?"
"Well, diners are paying for Four Seasons-style service, dining room and (unlimited) premium ingredients including shrimp, oysters and crab. Not that I think $80 is inexpensive, mind you, just to point out what's involved. "

It better include bottomless shrimp for that price. And good premium giant shrimp. None of that Golden Corral shrimp.
