cut 1/2" fries, skins on
soak in cold water 10 minutes, dump water, repeat
season to taste (I prefer thyme, rosemary, garlic powder, paprika)
in 1/8" oil, fry in skillet on medium heat for 10 minutes, turning constantly to coat
transfer to cooking sheet, cook 30 min at 425, turning once
blot with towel
toss with coarse salt
