i made this curry last week - it was great and really pretty good for you... -- (edited)

It's a bit different with the fennel and the lemon, but really yummy. I served it on couscous.

POTATO CURRY WITH SPINACH

Ingredients:

4 - 6 medium potatoes, quartered
1/2 tsp turmeric
Water
2 tbsp vegetable oil (I used coconut)
1 tsp yellow mustard seeds (i didn't have these - just skipped them)
2 large tomatoes, chopped
1 large onion, chopped
8 curry leaves (I used curry powder because I didn't have any)
1 tsp salt
1 tsp fennel seeds
2 tsp cumin seeds
1 tsp dried crushed red chilies (add more if you want it spicy; this just added a hint of heat)
3 large garlic cloves, minced or crushed
1 large bunch of spinach, washed
Juice of 1 lemon

Serves 4

1. Put the potatoes and turmeric in a large pan with enough water to cover. Bring to the boil and simmer, covered, for 20 minutes or until the potatoes are tender. Drain and coarsely chop.

2. Heat the oil in a large frying pan. Add the mustard seeds and fry until they crackle. Watch out - they can pop and jump out of the pan. Reduce the heat and add the tomatoes, onion and curry leaves. Fry until the onion is soft, about 10 minutes on a medium heat.

3. Add the salt, fennel seeds, cumin seeds, chilies and garlic. Mix in the potatoes and a small amount of water. Cover and allow the potatoes to heat through for 5 minutes.

4. Add the spinach, in batches if necessary, and allow it to wilt. Squeeze in the lemon juice and serve hot.

(I did the second half of the recipe while the potatoes were cooking, so the whole thing took about 25 minutes including prep and cooking.)
