Before I go searching online, does anyone have a great gingerbread men recipe?

I want to make a little something to give to my clients so I'm buying some dog treats for the pooches and I want to give the people some gingerbread men. I've never made them but I figure I could do it with little trouble. I'm going to run out and grab a cookie cutter but I really want a good recipe for the *soft* gingerbread men. I don't want to make the hard, crunchy cookies.
Anyone make these and have a good recipe?

  - Not at all! You will need to refrigerate the dough for a few hours, though. Don't know how quickly you want these done. - kelly Dec 12, 08:39 6
