I'm already thinking about split pea soup and maybe a bean soup of some type.

Denver omelettes is an excellent idea, too.
I'm not much of a ham sandwich guy, though I do fondly remember my great aunt's ham salad (similar to chicken salad and tuna salad). I might try to dig up her recipe.
