Leia's demise might not even be shown on-camera. i fully expect the tradition to carry through of 'several years' passing between each movie as was done in all of the earlier films.
because of that, the "aging" Princess / Queen Leia will basically be written out and, possibly, be replaced by another mature female "leader" of the Alliance / New Republic / whatever.
Luke will likely be around for the 3rd movie. but again, i don't see him with a dramatic on-screen death. if his death is to be acknowledged in the movies, i suspect it will be because Luke is getting older now, and, being human, even as a huge Force master, can't live forever. He may go the way of Old Ben and assume oneness w/ the Force or something like Yoda in Jedi. Something like that. After he's done ensuring the next generation of Jedi are on solid ground.
