he was in a car accident between Star Wars and Empire Strikes back. Really bad one! Scars on his face and slightly disfigured him. So they worked the Wompa racking it's claws onto his face in the beginning of Empire to work it into the story. So that kind of changed his boyish good looks early on in his career.
So the beard covers those scars up and looks very good on him
