You can't argue that Ren would know Rey was his sister because he was in her mind and use that as proof she's Luke's daughter, for several reasons.
1. All that would prove, if it proves anything, is that Rey isn't his sister. It wouldn't prove paternity.
2. Unless you argue that he would know they were related, in which case he'd know just as easily they were cousins. Which he also didn't "see" when in her mind.
IOW, if you argue the mind reading proves they aren't brother and sister, then it also proves they aren't cousins.
The better reading of the scene is that he isn't aware of any relationship between them regardless of what their real relationship might be.
