We know from A New Hope that you can use the Jedi Mind Trick to obscure a person's perceptions. "These are not the droids you are looking for."

If we can speculate that Luke is Rey's father with zero explicit supporting evidence, then it is equally acceptable to speculate, based on film lore, that someone strong in the Force (Luke?) could obscure Han, Leia, and Rey's perceptions of family relationships. Especially if Han and Leia were willing subjects doing so in order to protect their daughter from Snoke, who'd already turned their son.
