It's been nearly a month since I started making healthier choices (general health and easier-to-control blood sugars).

I'm surprised at a few things:

1. Cutting waaaaaay back on the Diet Coke has been a lot easier than I anticipated. I will still grab one if I'm out to eat, but I'm not missing it all that much here at home. I bought 2 bottles last week and I still have 1.5 bottles left. That's *huge* for me. Drinking a lot more water too, which is a plus.

2. I used to avoid buying fresh veggies because they always got thrown away after rotting in the fridge's veggie bin. Now - I can't keep enough veggies in the house. It's crazy.

3. The new variety has been beneficial to the whole family. N told me yesterday that he *loves* asparagus (which he tried for the first time 2 weeks ago). Not every dish or veggie is a hit, but I'd say more hits than misses. (The cauliflower pizza crust, though - huge miss.)

4. Preparing meals takes a lot longer now. I'm so sick of cooking.
