I've roasted whole and sliced and broken into pieces and with various additions; but my very favorite is super easy (I've posted about it a few times in teh past, can't remember if you were around then). pieces in inexpensive plastic bag with some evoo and quite a bit of mrs. dash (or similar salt-free blend), roasted at 400 until pieces start to turn brown. eaten with or without ketchup.

so.freaking.good.

iirc, it was originally meant as a healthier option to french fries.
