A whole lot of information about someone based on an utterance of a few sentences.
I personally think that, as a person subjected to discrimination, prejudice, stereotyping, and all sorts of other forms of oppression throughout my life -- institutionalized or otherwise -- I have a duty to make sure I don't make the same mistakes with other people. I have a responsibility to make sure I don't commit the same sins against others.
So, until shown otherwise, I'm going to give someone the benefit of the doubt that she is speaking from ignorance, not malice.
And I'm not going to assume anything about a person's religion, cultural background, economic status, political ideology, etc. until I know otherwise.
