Ask to sign up for a shift (or two) as an elections observer.
Poll watching is pretty fun for the first half hour, then it gets very tedious.
Observing the "behind the scenes" (but still very open to the public) process is great for at least an hour or two. Much more activity, much more to learn, and usually more eccentric, fascinating co-observers hanging around.
