I go with sniffing the bot, er, stem end (I remembered where I am!) - you want fresh and sweet smelling and not fermented or otherwise icky, then feeling that it's heavy for its size a la citrus fruit, then tugging a bit on a leaf or two. for color, it's when they're starting to be yellow from the bottom up (some can be ripe with some green color) and with nice green leaves.
