Sulu was straight in the originals. He is now gay? The only thing that changed from the originals is they developed a nice story arc that makes the future of the established characters new. However, if you are born gay or straight Sulu remains straight. If being gay is a choice, then he can be gay.

I have been told that being gay is something you are born as and not a choice you can turn on and off.

So from that perspective, Sulu should be straight.

It's a ticky tack story line issue, but it also tackles the fight people have gone through to take the "gay is a choice" out of people's heads.
