I've run into 4 or so sentient alien NPCs, they tend to show up inside buildings or space stations. At this point they mostly sit there and give you some small inventory item since you don't really know their language yet. There seem to be quite a few NPC ships flying around though.

Each planet has "waypoints" that you can scan for and discover and around those waypoints tend to be items of interest. Buildings, Cargo Pods, monoliths, etc... I found a couple that offered me suit expansions to give me inventory slots.

FTR, you craft an item by holding down Square over an empty inventory slot. Once you've built your gun they you can switch between your gun and your mining laser with Triangle.
