So, i attempted to make gluten-free, vegan, zucchini bread last night. It's not bad (i doubled the recipe). -- (edited)

it's just denser and darker than normal.

(i am visiting a friend this weekend who i was making it for. We have a lot of zucchini to use up.)

And now i have a lot of tapioca flour, sorghum flour, guar gum.... I guess we'll be gluten free for a while too.
