There are numerous reasons why a 3rd WR is better than a kicker.

Since you can start up to 4 WRs, the comparison should actually be your 4th or 5th WR. Your 4th or 5th WR is the guy who hopefully plays when your starters are on bye or if they are injured/suspended. You're also drafting for upside at that point. If you pick correctly it's a big plus for your team. If you don't, you have the person you cut when you need a player due to byes/injuries.
With a kicker you could just as easily cut your kicker every week and play the matchups. Or just plug one in until byes hit, replace them with another, and then keep playing that one for the rest of the season. Which is what most people do most seasons.
At best taking the best kicker should be worth at most 2 points a week over the worst rostered kicker. And that presupposes that you draft the best kicker and keep them all season. If you do well with that later round WR, it could easily be a much higher advantage.
