since the onion is a health risk, he has to really make sure. sometimes it's in things that you wouldn't necessarily expect it would be.

an old boss's wife was allergic to both onions and garlic (and some seafood and chocolate, poor thing). sometimes people forget about onion/garlic powder and such, especially in recipes that call for things that are already made - seasoned breadcrumbs, salad dressing seasonings, etc.

that said, yah, many italian options that are or can be made without.
