who, within 5 years will open their own restaurant off the strip and get rave reviews by the actual few good local food critics

a lot of the chefs running the top restaurants in town for the celebrity chefs or the better places at the casinos do open their own places within 5-10 years working on the strip. A lot of them fail, and handful remain open, but every month or so a new place opens from a former strip chef. the bakeries and patisseries do the best.
