2 cups or so plain low fat yogurt (i used Nancy's)
one cucumber
one large clove garlic
one lemon
pinch dill
salt & pepper to taste
strain the yogurt thru a cheese cloth (or coffee filter) for a couple hours (i did it overnight)
cut the cuke in half and seed. grate with a regular size cheese grater. place on a paper towel and salt a little. let sit for a few minutes -- getting some of the moisture out.
add cuke, juice of the lemon, and crushed or very finely minced garlic glove to yogurt. add dill and salt and pepper to taste.
let sit for a couple hours in the fridge because then it gets yummier.
