It's crab stuffed jumbo shrimp wrapped with bacon and served with a dollop of hollandaise sauce on top

All the recipes I see are all into the bourbon glaze, so I'll guess the west coast version uses taquila, east uses cognac

yeah - we don't glaze ours ... it's just pure - crab/shrimp/bacon ... you don't really need the hollandaise but it's a nice touch -- nm
