All the recipes I see are all into the bourbon glaze, so I'll guess the west coast version uses taquila, east uses cognac

There's also some thing called the Dublin lawyer which is lobster poached in Irish whiskey

yeah - we don't glaze ours ... it's just pure - crab/shrimp/bacon ... you don't really need the hollandaise but it's a nice touch -- nm
