Actually, this one ties together quite well. They make a huge (almost painfully overstated) point about him losing to Jesse Owens in the Olympics. The family clearly believes it's about genetics rather than running skill.
So, he finds the fastest athlete that he can and body-snatches those skills. He gets to re-live the thrill of his youth, running fast, only he's doing it faster than ever before.
He also wouldn't care what the boyfriend thinks since that guy's just a walking organ donor. Nobody ever escapes the process, and members of the family clearly love to fuck with them prior to surgery.
