I'm not picky really, but I am definitely not going to a shiny restaurant to drop $100 on dinner where I don't know what I'm getting.

Granted, on rare occasions when we are prepared to have a nice meal out and we know that we're going to get a top tier dining experience, I don't mind shelling out.

This is way chains succeed. You know exactly what you are going to get at a fairly good price point.
