I would imagine visiting chefs get f'n fantastic food and service, best meals of my life were with the owner/maitre d of Le Central at friend's places

not only do you get awesomeness but they bring out dishes to try as they are thinking about adding to the menu.

a super expensive place would likely have a heads up because chefs would specifically say they are coming in hoping to get comp'd
