speaking of eggs..

mm, avocado toast with eggs. ;) -

I don't butter the toast. just toast (bread varies), avocado, and either a little salt (one of the few things I add that to - sometimes a regular kind, sometimes a few cracked pieces of flakes, sometimes hot salt, just enough to bring out the best avocado-y goodness) or a salt-free blend or hot sauce most of the time.

I've tried loads of different variations for other toppings over the years, and some are great - a little feta, some chopped dates, and a few red pepper flakes is up there for faves in recent years; but the simple wins the most.
